As Ramadan evenings unfold, let the aroma of irresistible Zaatar Sambosas fill your home. These tasty triangles, covered in the herby zest of zaatar and filled with delicious cheese, are a perfect addition to your Iftar spread. Crispy on the outside, flavorful within, they bring a touch of tradition to your Ramadan table.
This recipe is by food enthusiast and author Farah Abu Maizar. She has launched her latest cookbook 'Every Little Crumb's Ramadan 2025', which features more than 100 recipes inspired by her Palestinian-Jordanian roots.
INGREDIENTS
12 Kiri squares (cream cheese)
1/2 cup zaatar powder (45g)
1 egg
1/2 tsp white vinegar
To assemble: 12 sambosa wrappers
1 tbsp flour
1/2 tbsp water
For frying: vegetable oil, about 1/2 cup
INSTRUCTIONS
1. Place 1 kiri cheese square in one corner of the sambosa wrapper, if it's easier, cut it in half and stack the two halves on top of each other. Fold the corner of the sambosa up and over the filling to the other side, to make a triangle. Keep folding this triangle over all the way up the top. Mix together the flour and water to form a thick paste, and seal the ends of the sambosa to prevent them from opening up while frying.
2. Add the zaatar to a shallow pie plate or dish, and in a separate shallow dish vigorously whisk together the egg with vinegar. First, dip each filled sambosa in the egg mix, shaking off excess, then coat on both sides in the zaatar mix. Place coated sambosa on a tray until you're done with all. Place vegetable oil in a skillet, about 2 inches deep and heat on medium high heat. Once hot enough, add the sambosa and fry for around 2 minutes a side until golden brown. Remove to a paper towel lined plate to absorb some of the excess oil, then enjoy warm.
