Roasting the garlic for this bread makes a world of difference, it’s so full of flavor and absolutely over the top decadent. Perfect side dish!
This recipe is by food enthusiast and author Farah Abu Maizar. She has launched her latest cookbook 'Every Little Crumb's Ramadan 2025', which features more than 100 recipes inspired by her Palestinian-Jordanian roots.
INGREDIENTS
- 2 heads of garlic
- 3 tbsp olive oil, divided
- 1 stick unsalted butter, completely softened (100g)
- 1/4 cup chopped parsley
- 1/2 tsp salt, plus a little extra
- 1/2 tsp garlic powder
- Pinch of red chili flakes
- Pinch of cracked black pepper
- 1 small bag shredded mozzarella cheese (180g)
INSTRUCTIONS
1. Roast the garlic:
Preheat the oven to 180°C (350°F).
Slice off the very top of each head of garlic, just enough to expose the cloves while keeping them intact.
Drizzle the exposed garlic with 1 tablespoon of olive oil and sprinkle with a little salt.
Tightly wrap each head of garlic in foil and place them in the middle rack of the oven.
Roast for 40-45 minutes or until the garlic is soft and golden brown.
Set the garlic aside to cool slightly, and keep the oven on.
2. Prepare the bread:
Slice your bread into squares, being careful not to cut all the way through to the base.
First, cut strips down one side of the loaf, then turn the bread and cut strips in the other direction to create little square pieces of bread that are still attached at the base.
3. Prepare the garlic butter mixture:
Add the softened butter to a bowl.
Squeeze all the roasted garlic cloves out of their skins into the butter.
Add the 2 tablespoons of olive oil, chopped parsley, salt, garlic powder, black pepper, and red chili flakes.
Mix thoroughly to combine.
4. Stuff the bread:
Use a spoon to stuff the garlic butter mixture into all the cracks of the bread.
Be generous with the filling, making sure to get it around all the bread squares. Don’t worry if some spills on top of the bread.
While stuffing the bread, gently pull apart the squares to create more space for the filling.
Sprinkle the shredded mozzarella cheese thoroughly into each crack around the bread squares.
5. Bake the bread:
Wrap the stuffed bread in aluminum foil and place it on a baking pan.
Bake for 20-25 minutes, or until the cheese has melted.
Uncover the bread and bake for an additional 5-10 minutes until the top is golden brown and the crust is crispy.
6. Serve:
Enjoy the garlic cheesy pull-apart bread immediately!
