A total comfort favorite in any Palestinian household, but usually made with dried beans you need to soak overnight. I hacked the system by using canned beans, and it worked out so well and makes it so easy!
This recipe is by food enthusiast and author Farah Abu Maizar. She has launched her latest cookbook 'Every Little Crumb's Ramadan 2025', which features more than 100 recipes inspired by her Palestinian-Jordanian roots.
INGREDIENTS
For the stew:
- 2 tbsp olive oil
- 500g boneless beef, cut into 1-2 inch cubes (1 lb)
- 1 small onion, diced
- 3 tbsp tomato paste
- 1 bay leaf
- 1 tsp each seven spices or allspice and salt
- 1/2 tsp black pepper
- 1/4 tsp each cinnamon and cumin powder
- 4 cups water
- 2 cans white beans, rinsed and drained (400-500g each)
For the topping:
- 1 tbsp olive oil
- 10 garlic cloves, minced
- 1 large bunch coriander (cilantro), chopped
- Pinch of salt
DIRECTIONS
1. Sauté the beef and onions:
In an Instant Pot, set to medium-high heat.
Add 2 tbsp olive oil to coat the bottom of the pan.
Once the oil is hot, add the diced onion and sauté for 2-3 minutes, until the onion begins to soften.
Add the beef cubes and brown on all sides.
2. Add spices and liquids:
Stir in the tomato paste, bay leaf, salt, seven spices (or allspice), black pepper, cinnamon, and cumin powder.
Cook for 1 minute, stirring to combine the spices with the meat.
Add 4 cups of water and stir.
Close the Instant Pot lid and set it to cook on high pressure for 25 minutes.
Allow the pressure to naturally release once the cooking time is complete.
3. Add white beans:
Open the Instant Pot and add the rinsed and drained white beans.
Set the Instant Pot to sauté mode and simmer for 5-10 minutes, stirring occasionally, until the beans are tender and heated through.
4. Prepare the garlic-coriander topping:
In a skillet, heat 1 tbsp olive oil over medium-high heat.
Add the minced garlic and chopped coriander, along with a pinch of salt.
Stir and cook for 2-3 minutes, or until the garlic begins to brown and becomes fragrant.
5. Finish and serve:
Stir the garlic-coriander mixture into the stew.
Serve the stew with vermicelli rice and enjoy!
