Such a great way to elevate a humble block of feta cheese, by adding some zaatar and pistachios!
This recipe is by food enthusiast and author Farah Abu Maizar. She has launched her latest cookbook 'Every Little Crumb's Ramadan 2025', which features more than 100 recipes inspired by her Palestinian-Jordanian roots.
INGREDIENTS:
- 2 feta blocks (between 125-200g each)
- 1/3 cup pistachio powder (either homemade by grinding pistachios or store-bought)
- 3 tbsp breadcrumbs
- 1 tsp zaatar
- Pinch of red chili flakes
- 1 beaten egg
INSTRUCTIONS:
Add the pistachio powder, breadcrumbs, Zaatar, and red chili flakes to a shallow dish or pie plate, and mix to combine.
Pat dry the feta blocks.
Dip each side of the feta block in the beaten egg.
Firmly press each side of the feta block into the pistachio breadcrumb mixture to coat. Repeat with the second block.
Preheat the air fryer to 190°C (375°F).
Place the crusted feta blocks in an oven-safe baking dish.
Add the baking dish to the air fryer and air fry for 8-10 minutes, or until the breading turns golden brown and the feta is soft and cooked through.
Enjoy immediately, preferably with a drizzle of honey.
